Morning All:
I've seen several recent posts of beef ribs and just haven't been able to find the time to really look for some...the ones in Publix yesterday were so thin they didn't even rate as a "rib"...Went to Fresh Market today and found some decent ones...grabbed the five best...ready to go on the Egg (about 240 dome temp) with only some salt and Dizzy Pig Raising the Steaks...
After they had been on for almost 90 minutes added a pan of beans...
Went for about another 90 still at about 240 to 250...pulled for some tasty eating...
Can check those off the list for a while (probably not for long though as they were so gooooood).

Great looking ribs. Beef ribs are one of my favorites because it's east to control the portions. Brisket, not so much. I'm usually just cooking for two.
Any road will take you there if you don't know where you're going.
