Beef Plate Ribs

Two bone, 3.3. pound beef plate ribs. 24 hour salt "dry brine" then a light coat of Salt Lick Dry Rub. Rockwood lump. Cooking indirect at 225 to 203 degrees internal. This will take awhile - it's over 3 inches thick. Inspired by:

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

I'm doomed. The posts about plate ribs the past few days have got me thinking "How long has it been since I had those..." This cinches it, I've got to go out and find someplace that has them not cut into singles. At least my wallet will be skinnier.

After seeing this as well as a few other posts I decided to see if my Kroger had them and evidently don't. I found chuck short ribs and back ribs. I asked if they had any plate ribs and was told no. So will be looking elsewhere in hopes of finding and trying soon.--Because I'm like ice, buddy. When I don't like you, you've got problems.

Wish I could find something like that around me. They are all trimmed so poorly that they won't cook well - too thin and poor marbling. I can't afford to buy SRF Beef ribs. I'll keep looking and hoping. Perhaps someday I'll find a good source. Until then, I live vicariously through posts like this.South SLO County -

@SoCalWJS, ask for uncut short ribs. Usually come 5 ribs to a slab. I always need to ask but the butcher always has them.*******Owner of a large and a beloved mini in Philadelphia
