Friday I competed in my second competition and ended up winning first place. This was strictly a rib competition. I took a half day Thursday and headed up to our cottage with my cousin and one of my good friends. Although they do not know a whole lot about bbq they are good company and supporters. The competition is put on by the town where my cottage is so it was a perfect setup. I met some really good people and had a very good time. Most of the guts in the competition have been doing it for several years and I learned a lot from them. I am already looking forward to next year's Ribstock!

Well I started off Friday morning by boiling them for 30 minutes............wait did I just give away my secret? Haha. They supplied the ribs for us at this competition, we got a half slab of st.louis and a full slab of baby backs. After we got everything all set up I rubbed the ribs down. We got the ribs at 9 and turn in wasn't until 5 so I had some time extra time. I used Eat BBQ rub and sauce. I put a couple other ingredients on them as well but not much more than S&P. I used a mix of apple wood and hickory with the lump. I smoked for just over 3 hours and then foiled with honey and brown sugar for about 1:15. I pulled them out and opened up the foil and let them set for about 20 minutes. I put them back on the smoke for the last hour and sauced them with about 30 minutes left. I wish I would have taken pics of my turn in box but when all you are thinking about are the ribs You forget to do simple things.

Thanks, this one meant a lot to me. I did one back in March with one of my very good friends. He passed away suddenly in the beginning of April. We were planning on doing this one together so I went ther to win it for him.
