Had a Central Market Gift Card from my students and got a couple of porterhouse steaks.. Followed APL's recipe, turned out fantastic!

@bill37 Like most APL recipes, it is pretty involved. I highly recommend his book, Serious Barbecue. The meat was marinated for a few hours, seared in a ci skillet, rested for 5 minutes in a butter bath, rubbed the bones with garlic, then direct on the grate for a few minutes each side, then rested 5 minutes in the butter bath, then I lowered the grate and back on for a minute per side. Rested again in the butter bath for 5 minutes, then served.

Can't go wrong with APL! I haven't tried this one, but I do his Worcestershire ribeye one all the time, and it's pretty awesome.
