    When we were in the burbs, I went to Al's Market in Wilmette. Joe (the owner and son of Al) dry ages prime rib loins in his walk in, and keeps a keg of Spatten in there, too

    @dmchicago, where did you find that meat in Austin?  I'd love to find a real butcher here.

    @eggnewtoy

    when I was in Chicago I got my meat at Paulina Meat Market or Gebheardts. I lived in Lincoln Park.

    BUT when Eataly opened, it was the ONLY place I bought meat.

    Game changer.

    @eggnewtoy all excellent albeit pricey meat markets.  Try Gene's Sausage Shop in Lincoln Square if you're on a budget.

    @KKorkmaz @dmchicago @20stone Thx for the recommendations.  when in the city, I am a Paulina market and Gebhardts fan.  In Northfield, Hofherr's that is good for specialty items and Wilmette has Zier's. Checking out Al's this week.

    @KKorkmaz--Ahhh Lincoln Square always had those great sausage places.  There is also Bobby Nelson's in Kenosha for all things sausage.
