Braised Beef Short Ribs over Cheesy Polenta (pic intensive)

Used the mini and the large for this cook:





Gave the short ribs about an hour low and slow indirect on the mini until they got nice and smooched up with olive wood smoke.  





After the ribs got kissed with smoke, I fried up some bacon in a CI DO.  Then took the bacon out, added the short ribs to the fat and fried on all sides til the had a nice color. 





Then took the short ribs out and let some chopped onions, carrots, Rosemary, thyme, S&P, and garlic get happy.




Next, added in some red wine and beef broth and let it come to a boil for a few minutes with the lid on.  



Then added in the ribs and transferred to the large, indirect at around a 350 deg f dome temp.  Used the CI Platesetter that @theyolksonyou gave me.  Loving it btw.  :)
