This year was a certainly an adventure with the weather leading up to Eggfest start time. We setup our 2 popups on Friday and had them both anchored down to ride out the coming weather overnight. They both made it without any harm!
We served over 700 servings of our Texas Jambalaya and right at 400 of our Margarita Mini Cones. I think Shelly and I sat down for about 2 minutes one time waiting on the Margarita Minis to come of the 2 Eggs.
I did think ahead and put a fan in each of the front upper corners of the popup to keep Shelly cool off during the Eggfest!!
It was a good time with some great Egghead friends. And hats off to Nikki, Bob and their crew for the Best Texas Eggfest yet. Over 2,000 tasters were in attendance I was told.
We will be back next year for sure. You should try to make it also.
