SRF Filet Reverse Sear Disaster

Too long on the CI, so you can see how that one on the plate got a little too cooked under the crust.
I'm devastated, of course. But as disasters go, I'll take it. Back to the drawing board.

That's a disaster?! That looks great! Did you sear on the CI grates AND the CI pan? Or did you just slowly bring the temp up on the grates and sear on the pan? I've thought about searing in both as it gives it better coloring...Milton, GA

As I said, I was "devastated."
This is the curse of the perfectionist . . . letting the perfect be the enemy of the good, finding the dark cloud in the silver lining, etc.
I bought the SRF filets on sale . . . and they tasted fine (almost great, even), notwithstanding the low-rent tater tot side.
Imma time the CI next time. And, I didn't mention, they were a tad underseasoned, too. But that's another complaint for another thread.It's a 302 thing . . . -

In my opinion...you are way over thinking. First, those look great. Second, don't worry about that hairline done layer. No impact at all. Next go, just throw those bad boys on hot and flip and flip until you like color...bet they will be just as delicious. You sound like my 7 year old son when one thing in his day doesn't go perfect and it is the worst day easy ever. As others have said I would eat that and when I reverse sear I go indirect then either direct on the grill or in a CI skillet with butter for about a minute on each side. I prefer my steaks medium rear to medium so this is perfect to me. I would say it is more like lesson learned.XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo.
