Hallibut

Options
Had someone give me some fresh caught halibut. How would you guys cook that?

    I wouldn't do much more than sea salt, fresh ground black pepper and cook a few minutes per side on either hot cast iron pan or direct on grate around 400.  Finish with a pat of herb butter.  Just make sure you don't over cook (internal temp of 130).  
    Fresh fish like that stands on its own and doesn't need much.

    +1 to this.  You can also do it en papillote with a touch of butter or olive oil and salt and pepper.

    I have friends in Oregon who sauté chopped green onion with a small clove of minced garlic until soft then mix it with a little mayo salt, pepper and fresh chopped parsley. They brush this on the fillets and sprinkle lightly with dried breadcrumbs. They then cook indirect at 400 deg on their kettle. It is absolutely outstanding.

    Be careful when following the masses. Sometimes the M is silent.
