I was feeling like chicken and came up with this.....
I used my new go to for rubs Lanes BBQ signature, SPF 53 and Sweet heat!!
Butterflied some chicken, and cooked them at 375. Once I flipped them, I loaded the tops with BBQ sauce, turkey bacon, sautéed button mushrooms, fresh sliced scotch bonnet peppers and topped it all off with some fresh ground old cheddar.
This was really spicy but so good!!

Fresh jalapeño would work well too. Just remove seeds and it won't be all that bad. I really like spice so the scotch bonnet were perfect for me

I was planning on cooking up just plain bbq rubbed breasts tonight, but that plan just went in the trash! Think ill try to replicate something similar. Wanted to resurrect this, for those who might have missed it.
I did breasts seasoned with kickn chicken, 6 pepper blend and blackened. Sautéed mushrooms and turkey bacon, substituted scotch bonnets for pickled jalapeños. Very tasty, only mistake was putting the toppings on the rounded side of the chicken vs the side where I filet'd them in half.
Cooked direct at 400 as I still don't have a raised rig, was just mindful of the time, came out juicy for breasts.
