Love paella on the BGE-it's "all good" and when you nail it, it is a passing eggsperience.
I have a LBGE and go raised direct and it seems to afford more of a chance to get the soccarat. But any paella cook is a winner-congrats.

It seams to me in comparing my prior cooks when I use the canned crushed tomatoes the Socrate goes black I think there must be sugar added.

Love me some paella! I like to toss in all types of shellfish too! This one has clams, mussels, U16 shrimp and some crawfish.
