Ground turkey and cheddar cheese empenadas

Options
Ground turkey and cheddar cheese empenadas made with gluten free pastry dough.

Some key points :angry: 

Keep the dough cold !

Egg wash the dough before putting on the egg.

Don't walk to far from the egg as this is flaky pastry and could burn if on more than 14-15 minutes.

I had to snap this picture quickly as my family dove in and tore this up .

    Did you pre-cook the turkey before assembling?  I would think the pastry would cook fast on the Egg.
    I just picked up a lb of ground turkey tonight, have other plans for tomorrow however....  ;)

    Yes I did precook the ground turkey with , onions , green peppers,  cumin, some of my seasonings,  and garlic. 

    Rolled out the dough and cut the circles out. Don't fold , just put two tbs on the bottom top with another circle of dough. I crimp the edges with a fork then egg was indirect on the egg for 14-16 minutes.

    I love empanadas. These look killer - I'd hurt myself eating them. That's why we don't make them often :)

    Thanks!  I just realized I have a tube of Pillsbury dough round things in the fridge, I could roll each one out and do kinda the same thing tomorrow.
