Chicken thighs stuffed with mushrooms, artichoke and mozzarella. It measured 165 but looked underdone. Sher-bear was concerned. I went with the thermapen. It was extremely tender.
Green egg, dead animal and alcohol. The "Boro".. TN

Looks good to me Uncle Apple. For the record, when I stuff them, I pull them when the stuffing registers 160 degrees, not the meat.

They look great! With dark meat I have found they often have little red pockets/veins whatever of pink. I have cooked them to 190+ and they can still look that way. Trust the pen.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

I had the same problem with thighs last week. Thermapen said 165 but as they rested on the counter it was running red. Never got sick so must have been a fluke deal.
