Mexican Themed Xmas

My other half wants to do a Mexican themed xmas dinner for the family.

I was going to do some Carne Asada for sure, any other must haves from you crazies?

    I had this one bookmarked: http://eggheadforum.com/discussion/1181812/mojo-smoked-pork-carnitas-tacos/p1 I think this would be a good one because you can smoke the butt ahead of time and finish off in the dutch oven inside. Frees up the egg for other exploits.

    Mole isn't that difficult. But, if you're going to do it, use chicken thighs, not breast meat!

    It depends on how many other people can cook and work together in a small space. Personally I would make lots of apps and other small ish plates. Unless you are going to all sit down Thanksgiving style. And personally tamales are a PIA. Guac, Pico, Queso in the crockpot, carnitas, meatball soup, fixings for soft tacos, I would use small 4 inch tortillas, lots of good cold beer and margaritas. And a Pinata for the kids

    I second, third and fourth Tomales!  That's pure Latino tradition...at least it is in my Wife's Familia. Prima Chila just finished making 7 dozen and that's lite

    Tomales are labor intensive and it helps to have extra helping hands.

    I lived in Albuquerque for 5 years, and one tradition I really liked (even though it's not food-related) were candelabrias:
     

     
    Simple brown paper "lunchbags", with a bit of sand in the bottom and a candle embedded.  I must be spelling it wrong, because it took awhile to find an image, they're actually quite common in the Southwest.  
     
    And now I'm hungry for tamales.
