Last weekend started the process of making my own bacon. Should be able to smoke it on Saturday and eat it on Sunday.

Sliced and fried the bacon this morning. Good stuff, a little salty in some spots so will have to be a little more aggressive during rinsing. Used an electric knife to slice, worked well.Elkhorn, NE

I just cooked up another pound of mine this morning as well. It is so good and satisfying when you dial in the flavor profile you enjoy the most. I have about 5 more pounds before starting another batch. Not sure if I like getting ready to cure it, packaging it, or eating it the most.
Okay, who am I trying to kid. Eating it is the best. But the other parts are not so bad.--------------------------------------------------
