Last weekend started the process of making my own bacon. Should be able to smoke it on Saturday and eat it on Sunday.

Fantastic! @minniemoh we are doing the same thing. We usually give homemade cinnamon buns to neighbors and friends. The year we are adding bacon.

Don't have a slicer, so will have to sharpen the knives. Going to smoke it today.

Sliced and fried the bacon this morning. Good stuff, a little salty in some spots so will have to be a little more aggressive during rinsing. Used an electric knife to slice, worked well.

I just cooked up another pound of mine this morning as well. It is so good and satisfying when you dial in the flavor profile you enjoy the most. I have about 5 more pounds before starting another batch. Not sure if I like getting ready to cure it, packaging it, or eating it the most.

Okay, who am I trying to kid. Eating it is the best. But the other parts are not so bad.
