Quick question happy thanksgiving

First of all, Happy Thanksgiving everyone. I had a couple of questions to ask. I put the 14 pound turkey at 6:45 this morning at a average temperature of 275 degrees. I checked the turkey at 10:15 and the temperature on the breast was 175 and 185 on the legs with a thermapen. Can my thermapen be faulty or does the temperature and time seem about right. I took the turkey out and put it in some aluminum foil and then wrapped it in a towel and put it in a cooler. Should I put the turkey back in with the foil on or should I just let it rest in the cooler. Thanks in advanced!

Time for temp seems about right. To check your Thermapen, use it in a glass of heavily iced water and a small pan of boiling water. It's my understanding that the skin won't be too great after FTC, but putting it into the oven (or maybe high temp egg) for a bit prior to serving might - MIGHT - help.

Very unlikely the pen is wrong. Turkeys always cook faster than I expect!Chicago, IL - Large and Small BGE - Weber Gasser and Kettle

Looks great! Now you'll have to do it again next year!
