Some Beef Before the Bird

Options
Choice T-bone with some nice marbling.  Rested on the counter with some salt as I heated up the Small with my new Kick-Ash.  30 minutes late at around 500 dome, I added some pepper and seared 2 minutes per side, then 1 minute per side. 

Pulled, added my woo and some smoke chunks and closed the vents a bit.  Waited 10 minutes then added some Dizzy Pig Raising the Steaks and cooked 2 minutes per side for some smoke flavor. 

Excellent results!
