Steak, Potatoes, and Green Beans

Pulled one of the 45 day dry aged steaks out of the freezer and got it thawed.
Picked up a sample of a house steak rub from Go Fish in Reading yesterday when I was there, so I figured I'd try it.
Here it is rubbed and the wine is breathing.


On the small to roast with some oak for smoke.

Then I did the things required for a reverse sear at the end and here's a sliced shot.


Roasted some green beans with EVOO, balsamic vinegar, salt and pepper in the oven. They were good.


Also fried up leftover potatoes from last night on the stove.

And then I ate more, but didn't take more pictures.

My wife only had a small glass of wine. I'm happy about that, leaves more for me. :smiley:

    Outstanding! So it actually never occurred to me that one would freeze a dry aged steak. Does that do anything to affect the texture? I guess it makes perfect sense if you've got a large cut and not cooking all at once.

    Great meal and a very nice wine. The meal looks delicious. Get a decanter if you don't already have one, helps the Reds aerate, and once poured in "my trick" means somebody has to drink it all. I have a couple, because you just never know .....

    I've been digging the Toasted Head stuff lately. I like that it's finished in charred oak barrels.
