Turkey brine

plan on using mad max turkey method it will be a fresh turkey what do you think brine or no brine don't want it to salty any other method you recommend big bird 20 lb

If spatchcocking turkey I never brine, but if just doing turkey breasts I do. Also I don't brine chickens.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

I plan to brine and Mad Max.
Brine will be heavy on cider. No more than 18 hours in brine. Then maybe a fridge sit for 1/2 a day. Then Max method (herbs and fruit in cavity and compound butter all over).
