However you cook it, don't overcook it. -RP

Ben, I'm a big fan of Copper River Salmon even at $18 a pound I have to pay here in Illinois. CR is rich in taste if you don't even want to embellish it, but if you do here's our favorite recipe.
[ul][li]CarDogs Salmon recipe from 2002 - it's a winner!!![/ul]Re-gasketing America one yard at a time. -
Ben,
You should keep it simple with such quality, try Fresh squezed lemon juice, Dill and a dash of paprika for asthetics. cooked on an alder plank, Good Luck Jason

RRP, Copper River King is $30 per lb in metro Denver. CR Sockeye is $20 per lb.

All Alaska wild caught salmon is just as good (and exactly the same). Save yourself some dollars and buy regular 'ol wild caught Alaska salmon - Copper River has become a brand name in a sense, and it's nothing special.
That being said - if you are going to go ahead and fork out the fortune for the salmon, go for the sockeye (red salmon) rather than the king because it has a lot more flavor. Kings are great, but if you want more bang for your buck go for the sockeye.
Coho/ silver is also really good, but it is much lighter in flavor. Cohos have a very different digestive process than the rest of the salmon which affects their meat, so unless I caught it myself I wouldn't eat it.
Pinks (humpies) and Chum (dogs)are icky. I guess if I was stranded and dying.....[p]You guys have me thinking though... maybe I could trade fish for lump since I can't get that up here.
Hmmmm..
