I was lucky enough to acquire a used LBGE from a good friend of mine. He is moving out of state for work and decided to downsize some and not move the egg. I'm planning my first cook on it tonight. I think we are going to try our hands a some pizzas. The grandkids are excited about building their own and I'm excited about firing this baby up.

Pizza on the large...a match made in heaven.
Hints...
- preheat your stone
- I do mine plate setter legs down, tin pie plate upside down btwn PS and pizza stone
- parchment is great, but if you use flour, use it sparingly
- sometimes the fire will "lick" the crust in between the PS legs...so rotate the pie if necessary
- watch your heat. If your dough has sugar in it, it will burn somewhere around 450-550.
- everyone has their preferences, but when dealing with toppings, less is more....otherwise it takes too long to cook evenly (crust and top).
We do ours at 550, with our dough that's the sweet spot. By the 3rd pie we have to start watching the heat b/c the stone starts getting too hot. We cool it down if need be by using damp towels.
The key is getting the cheese to melt and turn brown before the crust goes to the dark side. It's called the "Maillard reaction". It imparts flavour.
