I had plans to fix a nice meal for my son, my husband, and myself today. Beef short ribs, scalloped potatoes, and the last of the zucchini from the garden. When my son left the house for the day he said that he wouldn't be home for dinner. Okay, well, I can still fix a nice meal for my man, right? Late this afternoon I got word that he was going to be hung up at work for much of the evening. By the time that knowledge hit home, the ribs were looking good and the potatoes were cooking right along. OK, fine. Dinner for one, it was.
