Nice Steak on the Mini

My wife found this beauty hiding in the midst of terrible looking ribeyes. Someone mispackaged this thick strip steak as a ribeye. It had the best marbelization I've ever seen on a strip. Only thing I can think of is that the butcher set it aside for himself, and it somehow ended up being mispackaged. Not complaining. It was one of the best steaks we've ever eaten. Seasoned with ample amounts of course sea salt, cracked pepper and butter.

Thx guys! @slovelad , I made a homemade CI grate awhile back to fit on the mini. You can buy them from BGE these days though. I went 700ish dome temp direct until I got a good sear, then went indirect until it registered 115ish internal. Then went direct again and finished with a dollop of butter on both sides until it registered 124ish.

@slovelad , it will go back down automatically when you toss in a stone. Just kinda have to eyeball it so you don't completely scorch the outside before the inside is done.
