No, it was pretty easy. . I lie, I didn't do it, my wife did lol! I would do 2 things differently though, I would do a bacon weave and I would sprinkle the bacon with a DP rub. We will be doing swineapple again, likely a party, it doesn't yield a lot of meat, but it is a neat way to do it.
The bacon fell apart and I think being single layer may have contributed to that.

@texaswig , I smoked them indirect until the internal temp was about 170ish. Took them off, cubed them up, added a little more seasoning along with bbq sauce in a CI skillet. Then pulled the stone out and cooked the skillet o' goodness direct until the pork had a nice tender consistency. Added a little more sauce here and there.
