Have a 3lb turkey breast and a 3 turkey roast on. Trimmed and seasoned yesterday. Mix of a Bodacious BBQ seasoning mix, S&P and some Tony Chachere's. Added some chili powder, Hungarian paprika and ground mustard to finish it off. Nice blend overall for Turkey.
Dome temp stable at 350 with an indirect setup. Added some copper tees under the drip pan for an air gap. Thanks @jeepster47.
Cooked some bread, in the oven, to go with the meal later.

Looks good and that bread is the bomb!!

The breast came off first with the roast following. Took both up to 160. The roast carried to almost 170.
Made a gravy from the drippings that collected in the resting pan. Everything starts with a roux!
Carved up.....
and finally plated!
The family loved it and the in laws were here also and enjoyed it as well. Had turkey, mashed potatoes, dirty rice and homemade bread. Everyone is full and happy! Happy SundayFort Worth, TX
