Thanks! Heads up that a 5 lb'er prob won't take a super long time...not sure if you need to do an overnight. I cooked this one at about 250 and it took 6.5 hours on the egg to get to about 200. Then I pulled it and foiled it for 2 hours before slicing. Good luck!Chester County, PA

It's been awhile since I've cooked a brisket and yours looks perfect. I bought a couple of USDA packers last week at Costco for $3.19 lb. Is yours a packer or flat?
