I like big butts and I cannot lie....

Got two nice, ten pounders, one rubbed with my own brown sugar based rub and the other I'm trying my first store bought rub....ever, lol.   Dizzy Dust I believe.  I left the fat cap on, but scored it like a ham. And of course, the Cyberq Wifi is making short order of keeping things in check....perfectly as you can see by the pic.  Going 275 dome which is about 250 food level.  If it stalls hard, I'll just push it to 350....I'm not a wrapper of butts.  Using mix of Pecan and Hickory for smoke.  For the first few hours, there was around a ten degree difference in butts, but it's all coming together nicely now.  Enjoy the food porn....I'll try and get finished pics too...but people get real aggro around here when the meat comes off the egg....

    I don't like to wrap either it doesn't seem that the fat renders as much. 
  • I did a wrap on a brisket I did recently due to being scared of ruining my first egg packer.....but I see no reason why on butts.  This is the brisket I did...
