Inspired by the chefs in this forum, thought I would try them using Keilbasa, thick sliced hickory smoked bacon, cream cheese mixed with extra sharp indirect at 325f for about 1 hour 15 minutes. Totally did not suck.cheddar, then dusted with my dry rub.

Absolutely right, they are called pig shots. I just did not want to litter the name with the stuff I made. Thanks for the compliment, I, MBW and my future son in law destroyed these things. Next time I am wrapping thin slices of tenderloin and wrapping them in bacon."Knowledge is Good" - Emil Faber

Those look great!
Wait, are we changing names again? Aren't these usually called pig shots?------------------------------

Yum! If I'm not swimming in the Nor-Easter rain system that is locked over the SouthEast this weekend, I'll be doing this to go with the bacon-wrapped tater tots that the kids like!

Something similar I did, but with potatoes. They were pretty good.
