Did two spatchcock chickens this evening for the first time. I am impressed by the way they turned out. I wish I had more pictures of the process, but as you can see we got a little excited and didnt make time for pictures. Went 425* raised indirect. Then removed the plate setter and and grilled skin side diwn for about 3 min. The wife said she perfered this type of chicken over boneless/skinless.

Spatchcock rules for sure. I do mine at 375 raised direct, skin side up, and they are perfect. Never done 2 at a time, I have a LBGE, and 1 is enough. Best chicken ever though.LBGE
