Is skirt steak worth 14.99/lb? ....this one sure was! 1.5 lbs of inside skirt (ha!) and some chicken thighs. Skirt seasoned with salt and pepper and marinated in olive oil, lime juice and crushed garlic for 30 min. Chicken seasoned with S&P, cumin, garlic powder. Cooked direct over high flames and served with assorted taco toppings and a chipotle chili mayo. Skirt steak was so flavorful- it should be easier to come by!

FWIW, I found it at Aldis for around $7 a lb. They were not the prettiest cuts I have seen but they tasted great.Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -

As the butcher once told me, each cow only has one skirt steak. So, since no one ever wanted it, it was very cheap - until --- FAJITAS were discovered by everyone outside of TX. Some places started substituting flank steak which isn't bad but not like skirt. -
