I never really thought that mopping would really make much difference on the egg based on what I've read in the past. WRONG!! This was a vinegar based mop that I squirted on the chicken every 30mins until done. Chicken was on the large for 3+ hrs at 225° indirect with white oak and Cherry l for smoke and the last 30 mins was at 400° direct to set the skin

Meanwhile the small was smoking the chuckie at 300° indirect with white oak for smoke. Once the meat hit 160ish into a pan with 1/2cup of beef broth and 1/4 cup or Worcestershire sauce till it finally broke loose at 214°

The corn was done on the mini while Mrs 3969 did the hopped up baked beans on the cooktop.

All plated up and ready to eat.
