1st Attempt - Paella

Two things I have yet to attempt on my BGE are Paella and Brisket. Haven't done brisket mainly because I am a tightwad and that is an expensive piece of meat to "practice" on. Watched @Big_Green_Craig fix paella yesterday at the Heart of Ga Eggfest and figured the time is here.
On a seperate note, I know Craig gets a lot grief and ribbing on here (I am guilty of piling on as well), but the guy is a nice guy who is extremely passionate about his cooking. I really enjoyed learning from him yesterday. He is a creative cook and I learned a lot

You can actually hear when it's done from the rice popping. Developing a good socarrat is the key to good paella.

Thanks for the compliments all Yes @fljoemon it came from Publix Just need to find an online source for saffron now. Only catch was I forgot to season it all when I put it all together at the end. Other than that, it was great. Good flavor and SWMBO felt it was the best thing ever cooked on the egg.In the middle of Georgia! Geaux Tigers!!!!!

Dont be afraid of a brisket just buy a small one. You dont have to make a 20 lb one. I made my first one last week it was great. I have only smoked 2 times and both time it was really good. I am a new egg'er so I am still learning myself.hello all I live in KY Bourbon country so I love my makers, love my egg but still love my wife the most
