Posting a beef short rib pic-today's cook sliced pic to follow

Recalling the thread about taking pics, today I am in the clear and an uncut rack (4 bones) of beef short ribs are in the game.  Here's a five hour in pic.  Next up will be sliced and diced...


Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    And here's a weak pic, sliced and this was 6.7 hours at around 250*F on the dome:
    Used a fair amount of Jack Daniels chips...missed the mark.

    I thought I loaded enough smoke wood to get a better look-realize it doesn't matter for the flavor but sometimes I just want to see if I can get there with the BGE-and yes, such success is fleeting at best.  Tastes great and the best is that I am finished before the horse race.

    For color I have had luck adding a water pan.  A real moist environment really seems to help with smoke ring.  Also adding more salt to the rub seems to help.

    Looks great Lou! For color I like to add a few chunks of cherry wood. Just seems to add that nice mahogany color.

    Agree. Another trick that most will flip out over is to add some Kingsford briquettes in with your lump.
