Brisket and Butts

Time for an overnight. Two 8lb Butts and a 13lb Brisket for a 50th Birthday party tomorrow. Going 250 on the adjustable rig with the oval stone. Rockwood, pecan and cherry. Salt and pepper on the Brisket and some pork rub on the Butts. Will post the finish tomorrow.

    Very nice, I'm sure a quality meal for a great celebration is in front of you. Curious, do you have theory on the brisket over the pork or is that just how you are doing it tonight?
    I raise my kids, cook and golf.  When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.
    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

    Dang-great way to spend the night.  And good call with brisket over butt.  Gonna be a great eats party if nothing else.  
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    I wanted the brisket farther from the fire, the bottom rack is hotter than the dome. The Butts are more forgiving than the Brisket and I think food cooks better higher in the dome.

    Brisket is Done! Butts were done an hour ago and in are FTC! ABT's on now while the meat rests. Sliced and pulled pictures later.
