My Butt Fell Apart

Bought a 9.7lb blade butt awhile back and had it in the freezer for about a month.
After it was thawed and seasoned it I put it in the refrigerator overnight. All was routine until I went to put it on the grill and it came apart in two pieces! One was about 2/3 and the other was about 1/3 of the original.
Cooked at 325 for about 6 hours and pulled at 180 internal.
It tasted great but the cook was a little faster than I expected.
I guess the distributor uses a meat glue to make 'em look bigger. Maybe they need a better glue.

Glad to hear you were happy with the results.

Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

Did it simply fall apart at the bone or was there no bone meaning it had already been removed? If the latter then yes it was either poorly glued back OR it had merely stuck together due to compression and then mere heat separated it.

It had 2 small bone sections so I guess they just used that wonderful meat glue so they could package and sell as one butt roast.
At least the 2 sections cooked up pretty even so both tasted good. Not the best looking butts I've seen but tasty.
