Chops on the mini

I'm prolly starting to sound like a broken record, mini this & mini that but this thing is wicked fast. I'm having to relearn setting and cooking style.  

Tonight was center cut chops egged to 120° then glazed with a honey/course mustard/soy concoction. Egged @550° cause that is where the egg wanted to be.
