Haven't had crappie since I left home (near MN), will be watching this thread; thanks!_____________
Remember when teachers used to say 'You won't have a calculator everywhere you go'? Well, we showed them.

Dredge them in seasoned corn meal and either deep fry or pan fry them. A great alternative is to blacken them and make fish tacos. I don't believe crappie have enough natural oil to smoke.
Any road will take you there if you don't know where you're going.

Man oh man. Don't ruin a nice batch of crappie by trying to smoke it.

My brother, there are just some things that are much better when fried as opposed to grilled or smoked. Trust me when I say that this is one of those times. Get the grease hot my friend.

I would fry it if I were you buddy. If you want to blacken it do it hot and fast.1 large BGE, Spartanburg SC

A friend of mine caught a limit of crappies the other year and asked me to smoke them for him. He wanted them to be like smoked whitefish so he cleaned them but kept them whole. (This was in my pre-Egg ownership days so I used my Cookshack but I don't see why the results would be any different.)
I brined them overnight and then dried them on a rack for a few hours in front a fan. I should have dried them longer as they were still a bit wet inside when I put them in. I smoked them with apple wood at 250 for a little over 2 hours. They were salty and a little smoky - just what we were aiming for.
Although smoking them was a change of pace, I still prefer fried panfish.Glencoe, Minnesota -
I have done this several times, normally when the FIL is up we just toss on a cast iron skillet, add some butter and oil then roll the crappie in crackers and eggs then fry til golden. However last summer I cooked some on a cedar plank around 425 direct with lemon pepper. I'll see if I can find a picture.

Thanks Pete. Like I said, have both fried and grilled so now I'm looking to try something different, ie smoking.
How long did you brine them?

10 hours. I used 1 cup of pickling salt & 1 cup of brown sugar in a gallon of water.Glencoe, Minnesota -

Pete, one last question, does the sugar impart any sweetness? I have never brined anything beforeLBGE in Northern VA

A cure and smoke process has been used for millennia to preserve fish. Consult Ruhlman via google, bing or some search engine or buy his book.

When I grill crappie, I toss them in olive oil, lemon, garlic, salt, shallots and fresh chopped parsley and let sit over night.
the next day, I take that mixture (after taking the fish out of the bowl) and stuff the insides of the crappie. I'll then take whatever mixture is left over, add more lemon juice and some paprika and use that as a braising liquid.
I then slap those fish right onto the heated grill, cook 5 mins, baste and turn, cook 5 more mins and baste and turn and let cook for about 2 mins.
I've only done this on my gas grill...just got my egg last week so I haven't had the chance to try it...now I want to smoke themLBGE in Northern VA -
Very difficult to roll, so I usually put them in a pipeVisalia, Ca @lkapigian

Not to speak of but it gives it a more complex taste than just salt.Glencoe, Minnesota -
