I smoked a pork butt this weekend and I have a ton of leftovers since I was only feeding an army of 3 (wife, 1 year old, and me).

Most often I just eat leftover sammichies, but it is great in all kinds of things. Carnitas, pulled pork pizza, enchiladas, omelettes, top a baked potato, salad.
The last one sounds kind of odd but a nice big salad with pulled pork on top is really good.
If I had to pick one it would probably be pulled pork pizza.
Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -

when we do a big pork butt like that I usually freeze it in portion sizes too. with a little juice if I can.....then I can pull it out and make pizza anytime I want!

I am +1 on the Taco's. I mix mine with some fresh cilantro, roasted green chili, a little chili and cumin powder. You can add a little chicken of pork stock to add moisture. I use onion on my pork butts....but feel free to add onion as well.Ellijay GA with a Medium & MiniMax

I think @theyolksonyou did the taquitos, you should be able to search for it.
several people have done bbq pork eggrolls that have looked amazing and everybody has raved about. search them both on the forum, should be easy to find. I think @Dyal_SC and/or @henapple have done these.
my fave that I've done is pizza, I also freeze some to dump in baked beans when I do a pan of those.
If we have lots of leftovers, they tend to wear out their welcome, so I try to portion it out, vacuseal and toss in the freezer.

BBQ pizza, Pulled Pork Eggrolls with a Sweet Chili Mustard Based BBQ Sauce, and Pulled Pork Hot Dogs. For the eggroll sauce, just use a 50/50 mix of mustard based BBQ sauce and sweet Thai chili sauce.

Taquitos was me indeed.
Tortilla las rolled around PP and queso(get the melting, not crumbling kind). Eggwash on the outside and the flap for adhesion, coarse salt and red pepper or habanero death dust. 350 till brown and crisp. 15-20 min. My want to flip part of the way thru for even browning.

Cut some slices, put it in gravy and then on the egg until it boils for awhile. Then put it on toast,mmmm good.

Thanks for the suggestions. I did the taquitos last night. Sorry no pics. I need to try my hand with the egg rolls. They look awesome and would complement some of my wok adventures.

Loaded baked potatoes are a good option.
I freeze my leftovers into lunch sized portions so that I can bring them to the office when I want a great lunch. The foodsaver works great for this
