Spicy Calypso Grilled Chicken Sandwiches

Ordered a 3 pack of Caribeque's Seasonings.  They arrived today and couldn't wait to try one tonight, even though we had chili and cornbread on the menu.  ;)  Gave the Spicy Calypso Kick a try.  Didn't disappoint.  

My biggest pet peeve is a seasoning being too salty. I truly cannot say anything negative about this rub. Flavor was crazy good -- different than usual and "islandy."  Went really, really well on the chicken sandwich with the other favors going on.  The rub and the Piri Piri were heavenly together.

Spicy Calypso Grilled Chicken Sandwiches with Mozzarella, Bacon, Onions, Pickles, Tomatoes, Lettuce, Mayo and Piri Piri Sauce.  Grilled up on the Mini BGE.

    I want to thank Dyal_SC for this recipe/idea. I prepared this same sandwich last night and it was one of the best that I have ever eaten. My wife said that she liked it better than a hamburger but she's not a beef person.

    The only changes that I made were that I cooked the chicken on my cast iron platesetter that I turned upside down so it was a little different spin there and then I used a peppered bacon that I got at our local butchers. 

    If you haven't given this sandwich a shot, you should. I don't think you will be sorry that you did.

    Have you tried the other rubs that you ordered? I'm not big on salt in rubs, so I might give these a try. Are they spicy? I like some heat :)

    Thx y'all!  LOL @minniemoh !  It's just the HD iPhone pix and the extra time of the lack of youngins' that make the food look good.   =)  @danv23 , you are going to love those seasonings.  @caliking , the spicy calypso is great if you like spicy.  All of them are great though.

    I have used Carribean rubs from a place in Clearwater, FL called Pirate Jonny and they are nice & spicy with low sodium content. http://www.piratejonnys.com/

    @Mantoothian , I went raised direct on the mini's CI grate at 350-400 deg f dome temp until the internal temp was 160 deg f.  No idea on the time.

    I think you put a fresh garden SC mator on anything and it will be outstanding....that said, you have certainly assembled some might fine morals of food there.
