It looks like my butts are running behind schedule. I've got three 8-9lbers that I've had on since 5am. Hoping to eat at 6pm. They've been at 250 the whole time, and they are all between 190-195. Will the hit 205 in 2 hours! I've bumped the grate temp up to 275. How high can I take the temp without burning the bark? Right now the look beautiful!!!

350. They should move pretty fast. Go to 300 first.

Also, don't worry about temp. If they probe like buttah, they're done, or the bone pulls easily.

195 may be right. Like @theyolksonyou said, if they probe with no resistance you are good.Fish, Hunt, Cook....anything else?

I bumped them up to 290, and the meat was at 205 in no time. The odd thing was the smallest one took then longest, and then it was 209 before it was like buttah.
Thanks for everything, the butts came out awesome, and were the hit of the party.
