Rare chicken cook

I almost never cook chicken low and slow anymore, but wanted a simple test cook for my stoker. Worked like a charm and the jerk chicken was pretty darn good to boot! Crisped up the skin direct once I approached my IT.

Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

I thought you were cooking the chicken to a rare temp.

Japanese do that all the time.  I was a little nervous to try when I was over there and I eat pretty much everything around the world.  Hard to break long standing perceptions.

    Looks great!

Ha! Don't think I'll ever be "brave" enough to cook it rare!
