Smoaked Pork Collar....had in a restaurant last night......

Very tender and tasty. Preperation methoed was 8 hours low and slow. Final prep before serving was seasoned and lightly grilled to get up to temp. Can anyone share any knowledge of this cut & can it be purchased retail via butcher? Any experiences cooking from the forum?

I picked up several collars (reasonably priced) for a cook on Friday. I will be smoking at 235 and shooting for a 185 pull and rest. I am going to also hold back one and try at a later date braising in a cast iron dutch oven (in Egg). I am so looking forward to the weekend.Ellijay GA with a Medium & MiniMax

Good deal! Did your butcher have to order it or was he able to cut it off of a shoulder? (If that is where it comes from...I'm not sure).

He cut it off of the shoulder and tied it up nicely for me. The owner made sure that one of his key butchers watched and was prepared for future request. They were stoked to learn about it themselves. Going to use some of @fljoemon exchange spices and sauces for the cook. That's great man. It sounds like you have a great butcher. I searched around and I think this is basically like the money muscle off the butt. So, it will be like the very best bites of pulled pork.
