Jerk Chicken with Black Bean & Corn Quinoa

Only 1 pic but the bird was partially deboned, marinated for 3hrs & cooked at 400° raised direct skin down for 30mins then flipped

    That looks really good! I bought a package of quinoa a while back. It still hasn't been opened! I've never had any and have no idea what it tastes like! I've been having "rice and peas" with jerk chicken. Not bad though a bit bland. Thanks for the quinoa recipe.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    The cumin in the quinoa really goes well with anything Jamacian flavored.

    @dyal_sc - from some of the flavor I seen you put out I think you would dig the quinoa. The jerk was nothing to brag about but the quinoa.....

    What recipe did you use for the jerk sauce?

    Well looks like a slam dunk irrespective of what you used. FWIW - Walkerswood is my go-to marinade.
