On Saturday, I went to pick up some ribs at Kroger cuz I heard they were on sale ($1.29 a lb). Also scored a butt at $.99 a lb. While I was there I saw some pre-marinated chicken fajitas for $3.99. Not too shabby a price. Hadn't had their brand, but figured why not. Grabbed the thighs, cuz well thighs are better than breasts. Tossed 'em on the egg for a bit while enjoying a cold beverage in my new Yeti Colster.

A little bit of home made whac-a-mol-eh, some crema, quesadilla cheese, see-lantro and some sautéed onions and call it a good quick weeknight meal.

I'd buy them again at that price. No idea what they normally run.

Yeah, I'm not sure either @tarheelmatt They looked fine when I previewed them, then the looked fine when I first looked at the post, now they're all jacked up and stretched out. WTH?

What's the white stuff in strips that's not onions in the finished pita? Is that the "quesadilla cheese?" What kind of cheese is that?

Thanks guys. @Theophan yes that it quesadilla cheese you see on there. Easy melting, creamy, stringy cheese. Not sure if its widely found around the nation. Might have to try a Mexican market. Can't remember the brand, but I can check if you want. @johnkitchens thanks for fixing the pics, although mine are now showing up ok on a different computer for me. Weird. @QingEsq to make a long story short, Yes. He sent me a few books as an apology in the end.

@chasw14 I can't help you much. I was shooting for 400 to maybe 450 direct not raised. It seemed stable at 400, but I went inside and was messing around with something or other. Came back out and it had topped 500. Adjusted the bottom vent a bit and threw them on anyway. Sat down with a beverage, bourbon and coke, and read for a few minutes, got up and flipped them, sat back down and continued the process a few more times, flipping and shuffling the chicken until they hit 165 -170. Thighs can take a little more heat than breasts and still don't dry out. No idea how long they took. Lately, I've been less concerned/not concerned at all about keeping track of my cooks. Just monitoring temps. Sorry. I was trying to beat the rain, so I cooked them earlier than normal. Came in and turned on the oven to 170 for a few minutes, but turned it off before it was done pre-heating. Stuck the chicken in there on one of those cookie cooling rack thingees over a cookie sheet tented with foil to just keep a little warm. Turned the oven back on a few times while waiting to eat, just for 30 seconds or so and held the chicken there for 35 to 50 minutes I suppose. Not an hour for sure. Was still hot and juicy when we were ready to eat after the kiddo was in bed.

Don't overthink it. Keep the temp around 400, maybe 450 and watch those internal temps. Pull before they are done and let them coast the rest of the way up while they are resting. You'll do fine. And post pics.
