Turkey Breast - Chef Alarms

Hey all,
Nothing fancy, just a bone in turkey breast injected with Tony Chachere's Creole Butter & Jalapeno and rubbed with grapeseed oil with various seasonings. I'm posting because it's my first cook with the new Chef Alarms. I had used some old thermoworks thermos that **** the bed, well the probes did, so it was time to just bite it and go pro. Anyway, as you can see I'm monitoring both lobes and the reading is just a few 10ths of a degree different. My old thermos would be a few degrees different! I love the fact that these probes are built to last and can stand 700 degrees. I'm not dumb enough to actually use them at 700 degrees, but I love to drink beer and make bad decisions. The Dude: This is a very complicated case, Maude. You know, a lotta ins, lotta outs, lotta what-have-you's. And, uh, lotta strands to keep in my head, man. Lotta strands in old Duder's head. Luckily I'm adhering to a pretty strict, uh, drug regimen to keep my mind, you know, limber.

I found replacement probes on Amazon for $12-$16 that work on any of my (cheap) thermometers. Burned 2 out trying to temp out something when the egg was raging at 600-650. you can stab it, check it and pull it out, but don't leave it in there with that kind of heat - you will burn out the wires in the probe as they are generally only rated to ~450 for prolonged heat exposure.
