Life has been crazy lately with work, moving, events, etc. I've been cooking a ton, just haven't had the time to post on the forum. So, here are several recent cooks.
Hope you enjoy...
Chipotle Lime Grilled Oysters
Diced chipotle peppers, adobo sauce, minced garlic, finely chopped parsely, lime zest and juice mixed into a compound butter. A little topping of the mixture on top of each oyster and grille direct just long enough until the liquid starts to bubble.
Drunken Mussels with Sweet Water 420
Sauteed shallots and garlic in butter in a cast iron until translucent. Add in a bottle of Sweet Water 420 beer and bring to simmer. Throw all of the mussels into the mix and cover with a lid. Stir in shopped parsley after 2 minutes. Cook until the mussels have opened. Serve with a loaf of crusty bread to sop up all of the liquid goodness!
Sesame Seed Crusted Yellow Fin Tuna Steaks
Seared on a super hot soapstone for approx 45 seconds on each side. Drizzle with a balsamic reduction.

An over the top Bloody Mary, inspired by Sobelmans in WI
Complete nonsense and just something put together for some fun. I already had the smoker going for another cook and had room to throw on some bacon wrapped onion rings, bacon wrapped tots, chicken wings, ABTs, shrimp and a double decker slider.
Siracha Peach Glazed Pork Chops.
