First Brisket on the Egg

Today's project. Picked up a 5# flat at Costco a few days ago. Put some coffee rub on it and let it sit. Now it's on the egg at 225. I've done brisket on other grills before, but this is the first on the Egg.

Good luck. . I have never done just the flat, bit heard it is temperamental.

I also should have mentioned, I'm using cherry for the smoke. The drip pan has some water. No flavorings or anything. I've not found that juice or flavorings in the drip pan add much to the finished product. (YMMV)HO HO HOLBGE in Lawrenceville, GA

Turned out pretty good. After about 5 and a half hours, the temp was about 170 so I foiled it, added some of the au jus in the drip pan and left it on the egg a couple more hours. Did a check and the thermometer slipped in the meat easily. So wrapped it in a towel and put it in the cooler for almost 2 hours until ready to eat. Sliced it up and it was plenty tender and not dried out. I forgot to take a plated pic but here is the remainder getting sliced to put in vacuum bags and go into the freezer.
