Got some ribs going this morning on the Triple Nickel (my XL's name) that will make their way to the lake today for lunch on the boat. Wicked Que Sweet Georgia Heat rub. Pecan Chunks.

You've got a keen eye @SmokeyPittThese are Publix specials. I bought the only two decent slabs left. I'm going to try and get a few more this weekend for the food saver/freezer. They had butts on sale too.

I picked up a slab yesterday from publix also. I have never cooked them before, I have only cooked baby backs. 3-2-1 method at 225?

I used to 3-2-1 and then tried 4-1-1. Finally decided to just cook at 225°, spritz with 50/50 water & apple juice mix once every hour and take them off when they pass the bend test and a toothpick probes like buttah. Try it sometime and you may never wrap again. My reason was because I was looking for a little tug on the bite instead of steaming the rib where the meat falls of the bone.
