It's a little early in the week but I'm planning for MNF with the Chiefs. I want to serve hot turkey sandwiches and chicken wings. Chicken wings I'm good with. I have a 8 lb. turkey breast any ideas on time-temp. and how long to cook? [p]Thanks,[p]CWM

Go with 20 minutes per pound, and about 325 to 350 degrees. It will turn out great, save some for me.

<p />Car Wash Mike,[p]3 hr at 350 dome temp and in a V rack over a drip pan. I also use a couple firebricks to help keep the drippings from burning. I use my double boiler drip pan to allow drippings to be used for gravy. Without it the drippings can burn - yuck.[p]Tim

Car Wash Mike,[p]I just used two flat bricks on the grid and under the drip pan to prevent the drippings from burning. A pizza stone would work or just a drip pan alone will work but I usually add a little water to keep it from burning and smoking. I use and like very very little smoke on turkey.[p]Tim
