butcher had butts on sale today, so I grabbed a nine pound bone-in. I'm still very new to the egg...but I'm going to give it hell...and will post all pics. Going to cook at 235-250 and use me remote control internal thermometer. Hopefully something I can be proud of!

If it were me I'd go for 250-275. Shave a little time off your cook and same results. Ive never noticed anything better about a butt cooked lower than 250 vs around 275. Just takes more time. Either way, have fun.

Great start. Start checking the probe around 195. If it slides in and out like butter, it's done. Neil be somewhere between 190 and 205....most likely. Good luck and let's see finishing shots!Joe - I'm a reformed gasser-holic aka 4Runner Columbia, SC Wonderful BGE Resource Site: http://www.nakedwhiz.com/ceramicfaq.htm and http://www.nibblemethis.com/ and http://playingwithfireandsmoke.blogspot.com/2006/02/recipes.html
